Ingredients
  

For the filling
  • 4 tablespoons cornstarch
  • 3/4 cup granulated sugar
  • 4 tablespoons salted butter (melted)
  • 2 1/4 cups heavy whipping cream Can be substituted with light cream if desired.
  • 1 tablespoon vanilla extract
  • 4 tablespoons salted butter (to top)
  • 1/2 cup cinnamon sugar (for sprinkling) To taste.
For the crust
  • 1 whole pie crust (at room temperature) Store-bought or homemade.

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and place your pie crust onto a baking sheet.
  2. Bake the pie crust for 10-12 minutes to partially cook it.
  3. In a small bowl, mix the cornstarch and sugar until well combined.
  4. In a medium saucepan over medium heat, add the cornstarch mixture, melted butter, and heavy whipping cream. Bring to a boil while stirring constantly until thickened.
  5. Remove from heat, stir in the vanilla extract, and pour the filling into the prepared pie crust.
  6. Drizzle with melted butter and sprinkle cinnamon sugar on top.
  7. Bake for an additional 25 minutes and broil for about 1 minute for a golden finish.
  8. Cool until room temperature, then refrigerate for at least one hour to set.
Serving
  1. Serve chilled with a dollop of whipped cream and optionally a sprinkle of cinnamon or caramel sauce.
