- In a large bowl, combine the shredded chicken, chopped celery, and hard-boiled eggs. Mix gently but thoroughly.
- In a separate small mixing bowl, whisk together sweet pickle relish, mayonnaise, onion powder, and pickle juice until smooth.
- Pour the dressing over the chicken mixture. Fold carefully to coat all ingredients evenly.
- Cover and chill in the refrigerator for a minimum of 1–2 hours. This allows the flavors to deepen and meld together.
- When ready, serve chilled!
