  • 3 cups cooked chicken breast, shredded Feel free to substitute rotisserie chicken for a faster option.
  • 3 tablespoons finely chopped celery
  • 2 hard-boiled eggs chopped
  • 3 tablespoons sweet pickle relish
  • 1 cup mayonnaise Duke's is recommended for best flavor.
  • 1/8 teaspoon onion powder
  • 1 tablespoon pickle juice
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the shredded chicken, chopped celery, and hard-boiled eggs. Mix gently but thoroughly.
  2. In a separate small mixing bowl, whisk together sweet pickle relish, mayonnaise, onion powder, and pickle juice until smooth.
  3. Pour the dressing over the chicken mixture. Fold carefully to coat all ingredients evenly.
  4. Cover and chill in the refrigerator for a minimum of 1–2 hours. This allows the flavors to deepen and meld together.
  5. When ready, serve chilled!

Notes
