  • 2 lb russet potatoes, thinly sliced Yukon Golds can be used for a buttery flavor.
  • 1 small onion, thinly sliced
  • 2 cups shredded cheddar cheese
  • 2 cups heavy cream Can substitute with half-and-half for a lighter version.
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme

  • Fresh parsley, optional

Method

Preparation
  1. Preheat your oven to 375°F.
  2. Grease a baking dish to prevent sticking.
  3. Layer the sliced potatoes and onions in the dish, followed by a layer of cheddar cheese.
  4. In a separate bowl, mix the heavy cream with minced garlic, dried thyme, salt, and pepper.
  5. Pour the seasoned cream over the layered potatoes and onions.
  6. Cover the dish with foil and bake for about 45 minutes or until the potatoes are tender.
  7. Uncover and return to the oven to bake until the top is golden and bubbly, typically another 15-20 minutes.
  8. If desired, garnish with fresh parsley before serving.
  9. Serve warm and enjoy!

Notes

For a richer flavor, consider adding diced ham or cooked bacon between the layers. Use fresh herbs like rosemary for an elevated flavor. Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat in the oven for best results.
