Ingredients
  

For the Custard Filling
  • 3 large eggs (room temperature) Use room temperature for smoother mixture.
  • 1 large egg yolk Adds richness to filling.
  • 2 cups whole milk Can substitute with non-dairy milk.
  • 1 cup heavy cream Substitute with half-and-half if needed.
  • 3/4 cup granulated sugar
  • 1/4 teaspoon nutmeg (fresh preferred)
  • 1/2 teaspoon cinnamon Adjust to preference.
  • 1/8 teaspoon ground cloves Use sparingly.
  • 2 teaspoons vanilla extract Substitutable with vanilla bean paste.
For the Pie Crust
  • 1/2 cup butter (softened)
  • 1/2 cup brown sugar Can replace with white sugar.
  • 1 large egg yolk Binds the crust.
  • 1 teaspoon vanilla extract Use the same as custard.
  • 1 cup all-purpose flour Don’t overmix.
  • 1 cup rolled oats Quick oats may be used.
  • 1/4 teaspoon salt A pinch balances sweetness.
  • 2-3 tablespoons water Added gradually.

Method
 

Preheat the Oven
  1. Start by preheating your oven to 350°F (175°C).
Make the Pie Crust
  1. In a mixing bowl, cream together the softened butter and brown sugar.
  2. Add the egg yolk and vanilla extract, mixing until well combined.
  3. Gradually add the flour, oats, and salt, just until the mixture comes together.
  4. If necessary, add water a tablespoon at a time until the dough holds together.
Form the Crust
  1. Press the dough evenly into the bottom and sides of a pie dish.
  2. Prick the bottom with a fork to prevent bubbling.
Prepare the Custard Filling
  1. In a separate bowl, whisk together the eggs, egg yolk, and granulated sugar until creamy.
  2. Gradually stir in the milk and cream.
  3. Sprinkle in the nutmeg, cinnamon, cloves, and vanilla extract, mixing until just combined.
Assemble and Bake
  1. Pour the custard mixture into the prepared crust.
  2. Bake for 40-45 minutes, or until the filling is set around the edges but still slightly jiggly in the center.
Cool Down
  1. Allow the pie to cool completely at room temperature, then refrigerate for at least two hours before serving.

Notes
