Ingredients
  

Crust Ingredients
  • 1/2 cup butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar Can replace with white sugar
  • 1 large egg yolk For binding
  • 1 teaspoon vanilla extract Use same as custard
  • 1 cup all-purpose flour Avoid overmixing
  • 1 cup rolled oats Quick oats may suffice
  • 1/4 teaspoon salt A pinch balances sweetness
  • 2-3 tablespoons water Added gradually until dough forms
Custard Filling Ingredients
  • 3 large eggs, room temperature
  • 1 large egg yolk Adds richness
  • 2 cups whole milk For custard base
  • 1 cup heavy cream Can substitute with half-and-half
  • 3/4 cup granulated sugar
  • 1/4 teaspoon nutmeg Fresh preferred
  • 1/2 teaspoon cinnamon Adjust to preference
  • 1/8 teaspoon ground cloves Use sparingly
  • 2 teaspoons vanilla extract Can use vanilla bean paste

Method
 

Make the Crust
  1. In a large mixing bowl, combine softened butter and both sugars until creamy.
  2. Add in the egg yolk and vanilla extract, mixing thoroughly.
  3. Gradually incorporate flour, oats, and salt.
  4. Slowly add water just until a dough forms. Avoid overmixing.
  5. Press this dough into your pie dish evenly and refrigerate while preparing the filling.
Prepare the Custard
  1. In another bowl, whisk together the eggs, egg yolk, whole milk, heavy cream, granulated sugar, nutmeg, cinnamon, cloves, and vanilla extract until well combined.
Combine and Bake
  1. Pour the custard mixture gently into the chilled crust.
  2. Bake in a preheated oven at 350°F (175°C) for about 45-50 minutes or until the filling is set and a knife inserted comes out clean.
Cool and Serve
  1. Allow the pie to cool at room temperature before slicing.
  2. You can enjoy it warm, or refrigerate it to serve cold.
