Method
Make the Crust
- In a large mixing bowl, combine softened butter and both sugars until creamy.
- Add in the egg yolk and vanilla extract, mixing thoroughly.
- Gradually incorporate flour, oats, and salt.
- Slowly add water just until a dough forms. Avoid overmixing.
- Press this dough into your pie dish evenly and refrigerate while preparing the filling.
Prepare the Custard
- In another bowl, whisk together the eggs, egg yolk, whole milk, heavy cream, granulated sugar, nutmeg, cinnamon, cloves, and vanilla extract until well combined.
Combine and Bake
- Pour the custard mixture gently into the chilled crust.
- Bake in a preheated oven at 350°F (175°C) for about 45-50 minutes or until the filling is set and a knife inserted comes out clean.
Cool and Serve
- Allow the pie to cool at room temperature before slicing.
