Preparation
- Preheat your oven to 350°F (175°C). Grease a baking dish for a non-stick finish.
- Melt the butter in a saucepan or in the microwave, then pour it into the prepared baking dish.
- In a mixing bowl, combine self-rising flour and sugar. Whisk together thoroughly.
- Add the milk and vanilla extract to the dry ingredients and mix until smooth.
- Pour this batter over the melted butter in the baking dish, but do not stir it together.
- Scatter the blackberries evenly over the top of the batter. They will sink while baking.
Baking
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and cooked through.
- Let it cool for a few minutes before serving, allowing the cobbler to set slightly.
Notes
Serve warm with vanilla ice cream or whipped cream. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for about 30 seconds or in an oven at 350°F until heated through. Consider adding crumble topping or lemon zest for variations.
