  • 1/2 cup melted butter
  • 1 cup self-rising flour
  • 1 1/2 cups sugar Adjust to taste for sweetness.
  • 1 cup milk Almond milk can be used for a dairy-free version.
  • 1/2 tsp vanilla extract
  • 3 cups blackberries (fresh or frozen) Thaw and drain frozen blackberries to avoid a watery batter.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a baking dish for a non-stick finish.
  2. Melt the butter in a saucepan or in the microwave, then pour it into the prepared baking dish.
  3. In a mixing bowl, combine self-rising flour and sugar. Whisk together thoroughly.
  4. Add the milk and vanilla extract to the dry ingredients and mix until smooth.
  5. Pour this batter over the melted butter in the baking dish, but do not stir it together.
  6. Scatter the blackberries evenly over the top of the batter. They will sink while baking.
Baking
  1. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and cooked through.
  2. Let it cool for a few minutes before serving, allowing the cobbler to set slightly.

Notes
