Ingredients
  

Base Ingredients
  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup brown sugar, packed
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 cups rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Topping
  • 1 cup raspberry jam You can substitute with other fruit preserves.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large bowl, combine the softened butter, brown sugar, and granulated sugar. Beat until smooth, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, oats, baking soda, and salt.
  4. Gradually add the dry ingredients to the creamed mixture, mixing until just combined.
  5. Reserve about 1 cup of the mixture for topping. Press the remaining mixture into the bottom of the greased baking dish to form a solid base.
  6. Spread the raspberry jam evenly over the base layer.
  7. Crumble the reserved oat mixture evenly over the jam layer.
Baking
  1. Place the dish in the preheated oven for 25-30 minutes, or until the top is lightly golden.
  2. Once baked, allow it to cool completely before cutting it into bars.

Notes
