- In a bowl, whisk together oats, flour, brown sugar, baking powder, and salt until combined.
- Stir in the beaten egg, melted butter, and vanilla extract until the mixture holds together.
Layering and Baking
- Divide the mixture in half and pat half into the prepared baking dish to form the base.
- Warm the raspberry preserves in a saucepan over low heat until spreadable.
- Spread the warm preserves evenly over the base layer.
- Crumble the remaining mixture on top of the raspberry layer.
- Bake for 25-30 minutes, or until the top is lightly browned.
- Allow the bars to cool fully before slicing.
