Ingredients
  

Dry Ingredients
  • 1.5 cups old-fashioned oats
  • 1.75 cups all-purpose flour
  • 0.67 cups light brown sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
Wet Ingredients
  • 1 large egg (beaten)
  • 0.75 cups butter (melted) Use room temperature for better mixing.
  • 1 teaspoon vanilla extract
  • 12 ounces raspberry preserves Can substitute with any favorite jam.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 7x11-inch baking dish.
  2. In a bowl, whisk together oats, flour, brown sugar, baking powder, and salt until combined.
  3. Stir in the beaten egg, melted butter, and vanilla extract until the mixture holds together.
Layering and Baking
  1. Divide the mixture in half and pat half into the prepared baking dish to form the base.
  2. Warm the raspberry preserves in a saucepan over low heat until spreadable.
  3. Spread the warm preserves evenly over the base layer.
  4. Crumble the remaining mixture on top of the raspberry layer.
  5. Bake for 25-30 minutes, or until the top is lightly browned.
  6. Allow the bars to cool fully before slicing.
