  • 3 cups all-purpose flour Can substitute with bread flour or whole wheat flour.
  • 1/4 teaspoon instant yeast
  • 1 1/4 teaspoons salt
  • 1 1/2 cups water Hydration is key for the dough.

Method
 

Preparation
  1. In a large bowl, combine the flour, instant yeast, and salt.
  2. Pour in the water and mix until it forms a wet, sticky dough.
  3. Cover the bowl with plastic wrap, allowing it to rest at room temperature for 12-18 hours.
Baking
  1. Preheat your oven to 450°F (230°C), placing a cast-iron pot inside to heat.
  2. After the dough has risen, turn it out onto a floured surface and shape it gently into a ball.
  3. Let the dough rest for 30 minutes.
  4. Carefully place the dough into your hot pot, cover it, and bake for 30 minutes.
  5. Remove the lid and continue baking for an additional 15-20 minutes until golden brown.
  6. Allow the bread to cool before slicing.
