- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom and sides of a pie dish to create the crust. Chill it in the refrigerator for about 30 minutes.
- In a large bowl, beat the cream cheese until it's smooth. Gradually add in the sweetened condensed milk and mix well.
- Add the lemon juice, lemon zest, and vanilla extract. Mix until it's all smooth and creamy.
- Pour the lemon filling into the chilled crust and spread it evenly.
- Refrigerate the pie for at least 4 hours or until it sets.
- Before serving, top with whipped cream and add lemon slices or zest as a garnish.
Notes
Keep the pie in the refrigerator. It will stay fresh for up to 5 days. Make sure it’s covered with plastic wrap or stored in an airtight container.
