Ingredients
  

For the crust
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
For the lemon filling
  • 1 cup freshly squeezed lemon juice Use freshly squeezed for the best flavor.
  • 1 cup granulated sugar
  • 8 oz cream cheese, softened Make sure the cream cheese is softened before mixing for a smoother filling.
  • 1 can sweetened condensed milk
  • 1 tsp lemon zest
  • 1/2 tsp vanilla extract
For garnish
  • Whipped cream
  • Lemon slices or zest

Method
 

Preparation
  1. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom and sides of a pie dish to create the crust. Chill it in the refrigerator for about 30 minutes.
  2. In a large bowl, beat the cream cheese until it's smooth. Gradually add in the sweetened condensed milk and mix well.
  3. Add the lemon juice, lemon zest, and vanilla extract. Mix until it's all smooth and creamy.
  4. Pour the lemon filling into the chilled crust and spread it evenly.
  5. Refrigerate the pie for at least 4 hours or until it sets.
  6. Before serving, top with whipped cream and add lemon slices or zest as a garnish.

Notes

Keep the pie in the refrigerator. It will stay fresh for up to 5 days. Make sure it’s covered with plastic wrap or stored in an airtight container.
