Ingredients
  

For the crust

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the lemon filling

  • 1 cup freshly squeezed lemon juice Use freshly squeezed for the best flavor.
  • 1 cup granulated sugar
  • 8 oz cream cheese, softened Make sure the cream cheese is softened before mixing for a smoother filling.
  • 1 can sweetened condensed milk
  • 1 tsp lemon zest
  • 1/2 tsp vanilla extract

For garnish

  • Whipped cream
  • Lemon slices or zest

Preparation

  • In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom and sides of a pie dish to create the crust. Chill it in the refrigerator for about 30 minutes.
  • In a large bowl, beat the cream cheese until it's smooth. Gradually add in the sweetened condensed milk and mix well.
  • Add the lemon juice, lemon zest, and vanilla extract. Mix until it's all smooth and creamy.
  • Pour the lemon filling into the chilled crust and spread it evenly.
  • Refrigerate the pie for at least 4 hours or until it sets.
  • Before serving, top with whipped cream and add lemon slices or zest as a garnish.

Notes

Keep the pie in the refrigerator. It will stay fresh for up to 5 days. Make sure it’s covered with plastic wrap or stored in an airtight container.
