Ingredients
  

For the crust
  • 1 cup almonds You can substitute with different nuts if desired.
  • 1 cup pitted dates Make sure they are soft for easy blending.
For the filling
  • 2 cups frozen blueberries Plus more for garnish.
  • 1.5 cups raw cashews Soaked overnight and drained.
  • 3/4 cup Silk Plain Soy Dairy-Free Yogurt Alternative
  • 1/4 cup lemon juice Adjust to taste.
  • 2 tablespoons lemon juice Additional for flavor.
  • 1.5 teaspoons vanilla extract
  • 1/8 teaspoon salt Use a pinch for the crust.
  • Lemon zest For garnish.

Method
 

Preparation
  1. Line a 9x9 baking pan with foil or parchment paper.
  2. In a food processor, combine the almonds, pitted dates, and a pinch of salt. Blend until a soft dough forms, adding 1-2 tablespoons of water if needed.
  3. Firmly press the dough mixture into the bottom of your prepared pan and set aside in the refrigerator to chill.
Making the Filling
  1. In the same food processor, add the frozen blueberries, drained cashews, soy yogurt, lemon juice, vanilla extract, and remaining salt. Blend until the mixture is completely smooth.
  2. Pour the blueberry filling over the chilled crust and spread evenly.
Setting and Serving
  1. Place the dessert in the freezer for at least 4 hours; overnight is preferable.
  2. Once set, remove from the freezer and let it sit for 5 minutes before slicing into 20-25 bars. Top with extra blueberries and lemon zest before serving.
