  • 1 pound shrimp, peeled and deveined Fresh or frozen
  • 1 cup corn kernels Can use fresh or frozen
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 stalk celery, chopped
  • 4 cups seafood stock or chicken broth Use based on preference
  • 1 cup heavy cream For richness
  • 2 tablespoons butter
  • 1 teaspoon Cajun seasoning Adjust to taste
  • to taste salt and pepper
  • for garnish chopped green onions

Method
 

Cooking Steps
  1. Melt the butter in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, celery, and bell pepper, sautéing until they soften (around 5 minutes).
  3. Stir in the corn and let it cook for an additional 2 minutes.
  4. Pour in the seafood stock (or chicken broth) and bring everything to a boil. Then reduce the heat and let it simmer for 10 minutes.
  5. Add in the shrimp, Cajun seasoning, salt, and pepper. Cook until the shrimp turn pink and are cooked through, about 5 minutes.
  6. Lower the heat again and stir in the heavy cream, heating it through without boiling it.
  7. Serve hot, garnished with fresh chopped green onions.

Notes

Fresh shrimp are ideal, but frozen shrimp can also be used. Don’t skip sautéing the vegetables; it enhances the flavor. Adjust the Cajun seasoning for heat preference.
