Cooking Steps
- Melt the butter in a large pot over medium heat.
- Add the chopped onion, minced garlic, celery, and bell pepper, sautéing until they soften (around 5 minutes).
- Stir in the corn and let it cook for an additional 2 minutes.
- Pour in the seafood stock (or chicken broth) and bring everything to a boil. Then reduce the heat and let it simmer for 10 minutes.
- Add in the shrimp, Cajun seasoning, salt, and pepper. Cook until the shrimp turn pink and are cooked through, about 5 minutes.
- Lower the heat again and stir in the heavy cream, heating it through without boiling it.
- Serve hot, garnished with fresh chopped green onions.

Notes
Fresh shrimp are ideal, but frozen shrimp can also be used. Don’t skip sautéing the vegetables; it enhances the flavor. Adjust the Cajun seasoning for heat preference.
