Ingredients
  

Main Ingredients

  • 2 cups rice Any type of white rice
  • 4 cups water
  • 1 tablespoon salt
  • 1 tablespoon butter Can substitute with plant-based butter for vegan option
  • 1 cup mixed vegetables (carrots, peas, corn) Fresh or frozen
  • 1 teaspoon black pepper
  • 1 medium onion, chopped
  • to taste fresh herbs for garnish (optional)

Instructions
 

Preparation

  • Rinse the rice under cold water until it runs clear.
  • Combine the rice, water, and salt in a pot and bring to a boil.
  • Once boiling, reduce the heat to low, cover, and let it simmer for about 18 minutes or until the water is absorbed.

Cooking

  • In a separate pan, melt the butter over medium heat.
  • Add the chopped onion and sauté until translucent.
  • Stir in the mixed vegetables and cook for another five minutes until they are tender.

Combining

  • Once the rice is done, fluff it with a fork and mix in the sautéed vegetables.
  • Add black pepper and mix well.
  • Serve warm, garnished with fresh herbs if using.

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days. To reheat, add a little water to the rice and heat it in the microwave or on the stove. Variations include adding proteins like chicken, shrimp, or tofu for a more filling meal.
