Ingredients
  

For the rice

  • 2 cups rice Rinsed under cold water
  • 4 cups water
  • 1 tablespoon salt

For the sauté

  • 1 tablespoon butter Can be substituted with plant-based alternative for vegan option
  • 1 medium onion, chopped
  • 1 cup mixed vegetables (carrots, peas, corn) Fresh vegetables can be used for a crisp taste
  • 1 teaspoon black pepper Adjust according to taste
  • to taste Fresh herbs for garnish Optional

Preparation

  • Begin by rinsing the rice under cold water until it runs clear.
  • In a pot, combine the rice, water, and salt. Bring to a boil.
  • Once boiling, reduce the heat to low, cover, and let it simmer for about 18 minutes or until the water is absorbed.

Sautéing

  • In a separate pan, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  • Stir in the mixed vegetables and cook for another five minutes until they are tender.

Combining and Serving

  • Once the rice is done, fluff it with a fork and mix in the sautéed vegetables.
  • Add black pepper and mix well.
  • Serve warm, garnished with fresh herbs if using.

Notes

You can store any leftovers in an airtight container in the refrigerator for up to three days. To reheat, add a little water to the rice and heat it in the microwave or on the stove.
