Ingredients
  

For the rice
  • 2 cups rice Rinsed under cold water
  • 4 cups water
  • 1 tablespoon salt
For the sauté
  • 1 tablespoon butter Can be substituted with plant-based alternative for vegan option
  • 1 medium onion, chopped
  • 1 cup mixed vegetables (carrots, peas, corn) Fresh vegetables can be used for a crisp taste
  • 1 teaspoon black pepper Adjust according to taste
  • to taste Fresh herbs for garnish Optional

Method
 

Preparation
  1. Begin by rinsing the rice under cold water until it runs clear.
  2. In a pot, combine the rice, water, and salt. Bring to a boil.
  3. Once boiling, reduce the heat to low, cover, and let it simmer for about 18 minutes or until the water is absorbed.
Sautéing
  1. In a separate pan, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in the mixed vegetables and cook for another five minutes until they are tender.
Combining and Serving
  1. Once the rice is done, fluff it with a fork and mix in the sautéed vegetables.
  2. Add black pepper and mix well.
  3. Serve warm, garnished with fresh herbs if using.

Notes

You can store any leftovers in an airtight container in the refrigerator for up to three days. To reheat, add a little water to the rice and heat it in the microwave or on the stove.
