Ingredients
  

  • 4 chicken breasts boneless and skinless
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
For the filling:
  • 1 tablespoon butter
  • 2 cups mushrooms finely chopped
  • 2 cloves garlic minced
  • 1/4 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley chopped
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 350°F (175°C).
  2. For the filling, melt butter in a pan over medium heat. Add mushrooms and garlic, cooking until mushrooms are golden. Remove from heat, stir in cream cheese, Parmesan, parsley, salt, and pepper.
  3. Cut a pocket into each chicken breast. Stuff with mushroom mixture and secure with toothpicks.
  4. Season chicken with salt, pepper, and coat with breadcrumbs.
  5. Heat olive oil in a skillet over medium-high heat. Sear chicken on both sides until golden.
  6. Transfer to oven and bake for 20-25 minutes, or until chicken is cooked through.

Notes

Ensure chicken is cooked through to an internal temperature of 165°F (75°C).
