Ingredients

Main Ingredients
  • 1 lb beef stew meat Can substitute with chicken or meat-free alternatives.
  • 4 medium potatoes, diced
  • 1 cup corn
  • 2 medium carrots, sliced
  • 1 cup peas
  • 1 cup green beans, chopped
  • 4 cups beef broth Can substitute with chicken or vegetable broth.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme Can substitute with rosemary.
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil

Method

Cooking Process
  1. Heat the olive oil in a large pot over medium heat. Brown the stew meat on all sides to seal in the flavor.
  2. Add the diced potatoes, corn, carrots, peas, and green beans to the pot. Give it a gentle stir to mix everything together.
  3. Pour in the beef broth and stir in the salt, black pepper, thyme, and garlic powder.
  4. Bring the stew to a boil, then reduce the heat to low and cover the pot.
  5. Let it simmer for about 1.5 to 2 hours, until the meat is tender and the veggies are cooked through.
  6. Adjust seasoning as needed. Serve warm and enjoy!

Notes

For best results, let the stew rest after cooking to enhance the flavors. Store leftovers in airtight containers for up to 3-4 days in the fridge, or freeze for up to 3 months. Reheat on stovetop for best texture.
