- Sprinkle both sides of the chicken breasts with garlic powder, onion powder, salt, and pepper, ensuring they are evenly coated with the seasoning.
- Heat a large, oven-safe skillet over medium heat. Add the olive oil and butter, and heat until the butter has melted.
- Add the seasoned chicken breasts to the pan and cook for about 6 minutes per side or until the chicken is cooked through.
- Brush the barbecue sauce over the top of the chicken breasts. If desired, flip the chicken and brush the bottoms with sauce as well (you may need slightly more sauce for extra sauciness).
- Sprinkle the shredded cheese evenly over the top of the chicken breasts.
- Place the skillet in the oven under the broiler for 2-3 minutes to melt the cheese.
- Remove the skillet from the oven and sprinkle the crumbled bacon, diced tomatoes, and green onions over the chicken.
- Serve hot and enjoy your delicious Monterey Chicken!
