Preparation
- Start the Day Before: Begin the panna cotta preparation the day prior, as it needs a minimum of 4 hours to set in the fridge.
- Bloom the Gelatin: In a small cup, combine 3 tablespoons of milk with the gelatin. Let it sit until it softens.
- Heat Milk and Cream: In a small pot over low heat, combine the remaining milk, cream, sugar, and salt. Stir until the sugar dissolves, careful not to boil.
- Mix in Gelatin: Whisk in the bloomed gelatin until fully dissolved, then add the vanilla extract.
- Cool and Pour: Let the mixture cool to room temperature, stirring occasionally. Pour into your selected vessels.
- Refrigerate: Cover and chill in the fridge for a minimum of 4 hours or overnight to set.
- Prepare the Berry Sauce: In a small bowl, dissolve cornstarch in water. In a saucepan, heat the berries with sugar, then add the cornstarch mixture to thicken. Stir in lemon juice to taste.
- Final Touch: Pour the berry sauce over the panna cotta before serving.
