Ingredients
  

For the Panna Cotta
  • 2.5 cups whipping cream Use high-quality cream for the best flavor.
  • 0.5 cups full-fat milk
  • 45 grams granulated sugar Adjust to taste.
  • 1.5 teaspoons vanilla extract Use high-quality for richer flavor.
  • 2.5 teaspoons unflavored gelatin Bloom in milk before mixing.
  • Pinch salt
For the Berry Sauce
  • 2 cups frozen mixed berries Can use fresh berries if preferred.
  • 1–2 tablespoons granulated sugar To taste.
  • 3 teaspoons cornstarch To thicken the sauce.
  • 2 tablespoons water To dissolve cornstarch.
Equipment
  • 6 Ramekins or disposable cups For serving the panna cotta.

Method
 

Preparation
  1. Start the Day Before: Begin the panna cotta preparation the day prior, as it needs a minimum of 4 hours to set in the fridge.
  2. Bloom the Gelatin: In a small cup, combine 3 tablespoons of milk with the gelatin. Let it sit until it softens.
  3. Heat Milk and Cream: In a small pot over low heat, combine the remaining milk, cream, sugar, and salt. Stir until the sugar dissolves, careful not to boil.
  4. Mix in Gelatin: Whisk in the bloomed gelatin until fully dissolved, then add the vanilla extract.
  5. Cool and Pour: Let the mixture cool to room temperature, stirring occasionally. Pour into your selected vessels.
  6. Refrigerate: Cover and chill in the fridge for a minimum of 4 hours or overnight to set.
  7. Prepare the Berry Sauce: In a small bowl, dissolve cornstarch in water. In a saucepan, heat the berries with sugar, then add the cornstarch mixture to thicken. Stir in lemon juice to taste.
  8. Final Touch: Pour the berry sauce over the panna cotta before serving.

Notes

Garnish with fresh berries or mint leaf for added color. Store in an airtight container in the fridge, and enjoy within 5 days.
