Ingredients
  

For the crust and topping
  • 2 cups rolled oats
  • 1 cup oat flour
  • 1/2 cup almond flour
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/3 cup maple syrup
  • 1/4 cup solid coconut oil
  • 1 tsp vanilla
For the filling
  • 3 cups berries of choice
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice
  • zest from half a lemon
  • 2 tbsp chia seeds

Method
 

Preparation
  1. Preheat your oven to 350°F and grease and line your 8×8 inch baking pan with parchment paper.
  2. In a saucepan, combine your choice of berries, maple syrup, and lemon juice and zest. Heat over medium-high until the berries begin to break down and bubble. Then, reduce the heat and let it simmer for 10 minutes.
  3. Remove the saucepan from heat and stir in the chia seeds. Allow the filling to cool for 15 minutes, stirring occasionally.
  4. In a large bowl, mix the oats, oat flour, almond flour, baking powder, salt, and cinnamon. Add the maple syrup, coconut oil, and vanilla, mixing until you achieve a moist but crumbly dough.
Baking
  1. Press 2/3 of the crumble firmly into the lined baking dish to form an even layer. Bake for 10 minutes before allowing it to cool for 5 minutes.
  2. Pour the berry filling over the crust and spread evenly. Add the remaining crumble topping.
  3. Bake for an additional 20-25 minutes, or until the crumble topping is golden brown.
  4. Let the mixed berry crumble cool completely before slicing into bars.
