  • 4 large large egg whites Make sure the bowl for whipping is clean and dry.
  • 1 cup granulated sugar Add gradually for stable meringue.
  • 0.25 teaspoon cream of tartar Helps stabilize the egg whites.
Filling Ingredients
  • 0.5 cup mango puree Can use store-bought or homemade.
  • 2 tablespoons miso paste Adjust quantity to taste for stronger flavor.
  • to taste Whipped cream (optional, for serving) Use for topping before serving.
  • to taste Mango slices (for garnish, optional) Enhances flavor and presentation.

Method
 

Preparation
  1. Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. In a clean, dry bowl, whip the egg whites until frothy. Add the cream of tartar and continue to whip until soft peaks form.
  3. Gradually add the sugar, one tablespoon at a time, while continuing to whip until the meringue is glossy and stiff peaks form.
Baking
  1. Spoon or pipe the meringue into circular shapes on the prepared baking sheet, creating nests with a small indentation in the center.
  2. Bake for 1.5 to 2 hours, until the meringues are dry and crisp. Turn off the oven and let them cool inside.
Filling and Serving
  1. While cooling, mix the mango puree and miso paste in a bowl until smooth.
  2. Once the meringues are cool, fill the center of each with the mango-miso mixture.
  3. Serve with whipped cream and garnish with mango slices if desired.

Notes
