- Preheat your oven to 200°F (95°C). Lightly grease a large roasting pan with cooking spray, and add the pretzels to the pan; set aside.
- In a medium saucepan, combine the brown sugar, cubed butter, and corn syrup. Place over medium heat, stirring consistently for about 5 minutes until it comes to a boil.
- Remove the saucepan from the heat and whisk in the vanilla extract and baking soda. Watch for bubbling!
- Pour the hot toffee mixture evenly over the pretzels, then sprinkle half of the toffee bits over them. Toss to ensure an even coating.
- Bake in the preheated oven for 1 hour, stirring every 15 minutes to ensure even baking.
- Once done, spread the pretzel mixture onto a wax paper-lined countertop and sprinkle with the remaining toffee bits. Allow to set for 1 hour before breaking into bite-sized clusters.
