Ingredients
  

Main Ingredients

  • 1 pound ground turkey or ground beef Use lean ground turkey for a healthier option or beef for more flavor.
  • 1/3 cup breadcrumbs or oatmeal For gluten-free, use gluten-free breadcrumbs or oats.
  • 1/3 cup Parmesan cheese Can experiment with different cheeses like cheddar or mozzarella.
  • 1 large egg
  • 1 can (8 ounce) tomato sauce or 1/4 cup ketchup For a BBQ version, substitute tomato sauce with BBQ sauce.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper
  • 1 teaspoon Worcestershire sauce
  • assorted to taste vegetables (onions, mushrooms, zucchini, broccoli, carrots, spinach, lentils) Optional add-ins to boost nutrition and flavor.

Instructions
 

Preparation

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a muffin tin with oil.
  • In a bowl, mix all the ingredients, reserving 1/4 of the tomato sauce or ketchup for topping.
  • Press the meat mixture into the muffin cups to form about 8 to 10 muffins.
  • Top each muffin with a dollop of the reserved sauce.

Cooking

  • Bake for 30-35 minutes until cooked through.

Notes

Allow the mini meatloafs to cool slightly before serving. They can be served as is or with sides like mashed potatoes, salad, or vegetables. To store leftovers, let them cool completely and place in an airtight container in the fridge for up to 3 days. Freeze for longer storage, each wrapped individually in plastic wrap.
