Ingredients
  

Meatloaf Mixture
  • 1 pound ground turkey or ground beef Choose your preferred meat.
  • 1/3 cup breadcrumbs or oatmeal Breadcrumbs or oatmeal can be used as a binding agent.
  • 1/3 cup Parmesan cheese Adds flavor and moisture.
  • 1 large egg Binding agent.
  • 1 can tomato sauce or 1/4 cup ketchup Reserve 1/4 for topping.
  • 1/2 teaspoon garlic powder Adds flavor.
  • 1/2 teaspoon onion powder Adds flavor.
  • to taste Salt and pepper Adjust seasoning as desired.
  • 1 teaspoon Worcestershire sauce Adds depth of flavor.
  • as desired assorted vegetables (onions, mushrooms, zucchini, broccoli, carrots, spinach, lentils) Optional; enhances flavor and nutrition.

Method
 

Preparation
  1. Preheat the oven to 350 degrees F (175 degrees C) and spray a muffin tin with oil.
  2. In a bowl, mix all the ingredients, reserving 1/4 of the tomato sauce or ketchup for topping.
  3. Press the meat mixture into the muffin cups to form about 8 to 10 muffins.
  4. Top each muffin with a dollop of the reserved sauce.
Cooking
  1. Bake for 30-35 minutes until cooked through.

Notes
