Ingredients
  

Main ingredients
  • 1 pound ground turkey or ground beef Choose based on preference.
  • 1/3 cup breadcrumbs or oatmeal Either works well.
  • 1/3 cup Parmesan cheese Grated cheese is best for melting.
  • 1 large egg Acts as a binder.
  • 1 can tomato sauce or ketchup Reserve 1/4 for topping.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper
  • 1 teaspoon Worcestershire sauce
  • assorted vegetables (optional) Add finely chopped onions, mushrooms, zucchini, broccoli, carrots, or spinach.

Method
 

Preparation
  1. Preheat the oven to 350 degrees F (175 degrees C) and spray a muffin tin with oil.
  2. In a bowl, mix all the ingredients, reserving 1/4 of the tomato sauce or ketchup for topping.
  3. Press the meat mixture into the muffin cups to form about 8 to 10 muffins.
  4. Top each muffin with a dollop of the reserved sauce.
  5. Bake for 30-35 minutes until cooked through.

Notes

Let mini meatloafs cool completely before storing in an airtight container. They can be refrigerated for up to 3 days or frozen for up to 3 months. Kids love them with ketchup for dipping!
