  • 1 bag tortilla chips, lightly crushed (9-10 oz)
  • 1 pound ground beef or turkey for lighter option Use ground turkey for lighter option.
  • 1 packet taco seasoning (about 1 oz)
  • 1 cup salsa, your preferred heat level Adjust spice level with mild or hot salsa.
  • 1 can refried beans (15 oz)
  • 2 cups shredded Mexican blend cheese, divided Can substitute with cheddar or pepper jack for a different flavor.

Toppings

  • Sour cream
  • Guacamole
  • Diced fresh tomatoes
  • Sliced black olives
  • Chopped green onions
  • Fresh cilantro leaves

Instructions
 

Preparation

  • Preheat your oven to 375°F and lightly coat a 9x13-inch baking dish with cooking spray or butter to prevent sticking.
  • In a large skillet over medium heat, cook the ground beef until browned and no longer pink, about 6-8 minutes. Drain excess grease, then stir in the taco seasoning and salsa. Let it simmer for 2-3 minutes to blend the flavors.
  • Spread half of the crushed tortilla chips evenly across the bottom of your prepared baking dish to create a crunchy base.
  • Spoon the refried beans over the chips, spreading them into an even layer.
  • Add half of the seasoned beef mixture on top of the beans, spreading it out evenly.
  • Sprinkle 1 cup of the shredded Mexican blend cheese over the beef layer.
  • Layer the remaining tortilla chips on top, followed by the rest of the beef mixture. Finish with the remaining cup of cheese.

Baking

  • Bake in the oven for 20-25 minutes until the cheese is melted, bubbly, and golden at the edges.
  • Let it cool for about 5 minutes, then add your favorite toppings and enjoy!

Notes

To store leftovers, allow the casserole to cool completely. Place it in an airtight container and refrigerate for up to 3-4 days. You can also freeze it for up to 2-3 months.
