  • 1 pound ground beef Can be substituted with ground turkey or chicken for a healthier option.
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning Use spicy taco seasoning for a hotter version.
  • 1 bag tortilla chips Can be substituted with crushed nacho cheese chips for extra flavor.
  • 2 cups shredded cheese Use your favorite blend of cheeses.
  • to taste sour cream for topping Optional, for creaminess.
  • to taste green onions for topping Optional, for flavor and crunch.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  • Stir in black beans, corn, diced tomatoes, and taco seasoning. Cook until heated through.

Assembly and Cooking

  • In a greased casserole dish, layer tortilla chips, followed by the beef mixture, and top with shredded cheese.
  • Bake in the preheated oven for about 20 minutes or until the cheese is bubbly.

Notes

You can make the casserole ahead of time by assembling it and refrigerating it without baking. It will stay fresh for 3 to 4 days in the fridge or can be frozen for longer storage. To reheat, microwave individual portions or place in the oven at 350°F until heated.
