  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 bag tortilla chips
  • 2 cups shredded cheese

  • Sour cream for topping
  • Green onions for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
Cooking
  1. Stir in black beans, corn, diced tomatoes, and taco seasoning. Cook until heated through.
  2. In a greased casserole dish, layer tortilla chips, followed by the beef mixture, and top with shredded cheese.
  3. Bake in the preheated oven for about 20 minutes or until the cheese is bubbly.
Serving
  1. Serve hot, topped with sour cream and green onions if desired.
