- Add the minced garlic to a small bowl and cover with lime juice. Set aside.
Cooking
- Heat the olive oil and ghee in a large skillet over medium heat.
- Add in the corn kernels and sprinkle with salt. Stir to coat the corn.
- Spread the corn in a single layer and let sit for about two minutes to develop a char.
- Toss the corn and flatten it again, repeating the sitting process two more times.
- Transfer the charred corn to a mixing bowl.
Assembly
- In a separate bowl, combine mayonnaise, sour cream, and tajin. Add in the garlic and lime mixture, stirring well.
- Pour the creamy dressing over the warm corn and mix until coated.
- Fold in green onions, cilantro, and sprinkle with cotija cheese. Serve warm.
