Ingredients
  

Main Ingredients
  • 3 cups corn kernels Fresh or frozen corn can be used.
Cooking Ingredients
  • 1 tbsp olive oil
  • 1 tbsp ghee or butter
  • ¼ tsp fine sea salt
Creamy Dressing
  • 2 tbsp mayonnaise
  • 1 tbsp sour cream
  • 1 tbsp fresh lime juice
  • 1 clove garlic, finely minced
  • 1 tsp tajin Adjust based on spice preference.
Garnishes
  • ¼ cup crumbled cotija cheese Can replace with feta cheese.
  • ½ cup thinly sliced green onions
  • ½ cup cilantro

Method
 

Preparation
  1. Add the minced garlic to a small bowl and cover with lime juice. Set aside.
Cooking
  1. Heat the olive oil and ghee in a large skillet over medium heat.
  2. Add in the corn kernels and sprinkle with salt. Stir to coat the corn.
  3. Spread the corn in a single layer and let sit for about two minutes to develop a char.
  4. Toss the corn and flatten it again, repeating the sitting process two more times.
  5. Transfer the charred corn to a mixing bowl.
Assembly
  1. In a separate bowl, combine mayonnaise, sour cream, and tajin. Add in the garlic and lime mixture, stirring well.
  2. Pour the creamy dressing over the warm corn and mix until coated.
  3. Fold in green onions, cilantro, and sprinkle with cotija cheese. Serve warm.
