Mexican Lasagna combines the comforting essence of traditional lasagna with bold, zesty flavors of Mexican cuisine, featuring layers of ground beef, refried beans, and gooey cheese, all wrapped in flour tortillas.

Ingredients
  

Meat and Sauces
  • 1.5 pounds ground beef
  • 0.25 cup water
  • 1 ounce packet taco seasoning mix
  • 1 jar taco sauce (8 ounce)
Tortillas and Beans
  • 12 pieces flour tortillas (8 inch) Or more as needed
  • 1 can refried beans (14 ounce)
Cheese
  • 3 cups shredded Colby-Jack cheese
  • 1 cup additional shredded Colby-Jack cheese

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch casserole dish.
  2. Heat a large skillet over medium-high heat and add the ground beef. Cook for about 10 minutes until it's crumbly, browned, and no longer pink. Drain any excess grease.
  3. Stir in the water and taco seasoning. Let the mixture cook and thicken for 5 to 10 minutes.
Layering
  1. Arrange 3 tortillas in the bottom of your greased casserole dish. Spread on half the can of refried beans and top with half of the seasoned ground beef.
  2. Sprinkle 1 cup of Colby-Jack cheese over the beef layer.
  3. Layer 3 more tortillas on top, followed by the remaining refried beans and half the jar of taco sauce, topped with another cup of cheese.
  4. Place 3 more tortillas, the remaining ground beef, and another cup of cheese on top.
  5. Finish with the last 3 tortillas and spread the remaining taco sauce over them.
Baking
  1. Bake the lasagna for 20 to 25 minutes until the top layer of tortillas begins to brown.
  2. Sprinkle the final cup of Colby-Jack cheese over the top and place under the broiler for 3 to 5 minutes until it's melted and bubbling.

Notes
