  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 cup shredded cheese (cheddar or Monterey Jack) You can swap out for non-dairy alternatives.
  • 1 cup cream or sour cream Greek yogurt can be used as a substitute.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste salt and pepper
  • Chopped cilantro for garnish (optional)

Method
 

Cooking Instructions
  1. Heat 2 tablespoons of olive oil in a skillet over medium heat.
  2. Season chicken breasts with chili powder, garlic powder, onion powder, salt, and pepper.
  3. Add chicken to the skillet and cook until golden brown and fully cooked through, about 7-8 minutes per side.
  4. In a separate saucepan, combine cream or sour cream with shredded cheese. Heat over low, stirring until melted and smooth.
  5. Pour the cheese sauce over the cooked chicken.
  6. Garnish with chopped cilantro if desired and serve warm.
