Preparation
- Preheat your oven to 190°C (375°F). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- In a large bowl, mix the ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, basil, parsley, salt, pepper, and milk. Stir until it is all combined, but be careful not to overmix.
- Shape the mixture into a loaf and place it on the prepared baking sheet or press it into the loaf pan.
Baking
- Bake for 40 to 45 minutes, making sure the internal temperature reaches 74°C (165°F).
Glazing
- While it bakes, melt the butter in a small saucepan over medium heat. Add the minced garlic and sauté for 1 to 2 minutes.
- Then stir in the Parmesan and parsley. Cook for another 1 to 2 minutes until it thickens slightly. Add a pinch of salt for flavor.
- After baking, brush the meatloaf with the garlic Parmesan glaze and return it to the oven for an extra 5 to 7 minutes.
Serving
- Let it rest for about 5 minutes before slicing. You can garnish with extra parsley before serving.

Notes
To keep the chicken moist, avoid overmixing the ingredients. You can substitute the ground chicken with ground turkey if you prefer. Adjust the garlic and herbs to your taste for more or less flavor. Feel free to add chopped vegetables like bell peppers or spinach for added nutrition and flavor, or try different types of cheese, like mozzarella or cheddar.
