Ingredients
  

For the meatballs
  • 900 g ground chicken
  • 100 g grated Parmesan cheese
  • 60 g panko breadcrumbs
  • 2 large eggs
  • 6 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp dried basil
  • 0.5 tsp dried parsley
  • 0.5 tsp fine salt
  • 0.5 tsp ground black pepper
  • 60 ml whole milk
For the garlic butter
  • 45 g unsalted butter
  • 25 g grated Parmesan cheese
  • 1 tbsp finely chopped parsley
  • Pinch fine salt

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. In a large bowl, mix the ground chicken, grated Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, and pepper until well combined.
  3. Form the mixture into meatballs and place them on a baking sheet lined with parchment paper.
Cooking
  1. Bake for about 20-25 minutes or until the meatballs are golden brown and cooked through.
  2. While the meatballs bake, melt the unsalted butter in a pan and add the remaining minced garlic. Cook for 1-2 minutes until fragrant.
  3. Once the meatballs are done, drizzle the garlic butter over them. Sprinkle with additional Parmesan cheese and chopped parsley before serving.

Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 3 months. Use fresh garlic for a stronger flavor. You can add chopped spinach or mushrooms to the mixture for extra vegetables, or crushed red pepper flakes for a spicy kick.
