Preparation
- Preheat your oven to 180°C (350°F).
- In a large bowl, mix the ground chicken, grated Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, and pepper until well combined.
- Form the mixture into meatballs and place them on a baking sheet lined with parchment paper.
Cooking
- Bake for about 20-25 minutes or until the meatballs are golden brown and cooked through.
- While the meatballs bake, melt the unsalted butter in a pan and add the remaining minced garlic. Cook for 1-2 minutes until fragrant.
- Once the meatballs are done, drizzle the garlic butter over them. Sprinkle with additional Parmesan cheese and chopped parsley before serving.

Notes

Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months. Use fresh garlic for a stronger flavor, and don’t overmix the meatball mixture to keep them tender. Feel free to add chopped spinach or mushrooms to the meatball mixture for extra veggies, or crushed red pepper flakes for a spicy kick.
