  • 2 cans (6 oz each) salmon, drained and flaked
  • 1 cup fresh spinach, finely chopped (or 1/2 cup frozen spinach, thawed and drained) Feel free to use frozen spinach if preferred.
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1/3 cup feta cheese, crumbled Can substitute with goat cheese for a creamier texture.

Preparation
  1. In a large mixing bowl, combine the flaked salmon, spinach, red onion, minced garlic, and crumbled feta cheese.
  2. Mix everything together until well combined.
  3. Form the mixture into small patties, about 2-3 inches in diameter.
Cooking
  1. Heat a skillet over medium heat, adding a little oil to prevent sticking.
  2. Carefully place your patties in the skillet, cooking for about 4-5 minutes on each side, or until they’re golden brown and crispy.
  3. Serve hot and enjoy your delicious homemade patties!
