  • 2 cans 2 (15.5-oz.) cans chickpeas, drained and rinsed
  • 1 medium cucumber, sliced into quarter-moons
  • 1 piece red bell pepper, seeds and ribs removed, finely chopped
  • 1/2 cup crumbled feta (about 3 oz.)
  • 1/2 cup halved pitted Kalamata olives
  • to taste Kosher salt
  • to taste Freshly ground black pepper
Dressing Ingredients
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup white wine vinegar
  • 1 tbsp. finely chopped fresh parsley
  • 1 tbsp. fresh lemon juice
  • 1/4 tsp. crushed red pepper flakes

Method
 

Preparation
  1. In a large bowl, combine the chickpeas, cucumber, red bell pepper, red onion, feta, and Kalamata olives.
  2. In a small bowl, whisk together the extra-virgin olive oil, white wine vinegar, parsley, lemon juice, and crushed red pepper flakes.
  3. Season the dressing with salt and pepper to taste.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
