- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the olive oil, minced garlic, oregano, thyme, basil, salt, and pepper.
- Add the chicken breasts to the bowl, ensuring they’re well-coated in the marinade.
- Arrange the marinated chicken breasts in a baking dish.
Cooking
- In the same bowl, toss the sliced zucchinis, red and yellow bell peppers, chopped red onion, halved cherry tomatoes, and sliced Kalamata olives with any remaining marinade.
- Spread the vegetable mixture evenly around the chicken in the baking dish.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and sprinkle the crumbled feta cheese on top.
- Return the dish to the oven and bake uncovered for an additional 10-15 minutes, or until the chicken is cooked through and the vegetables are tender.
