Ingredients
  

For the Chicken Marinade
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
Main Ingredients
  • 4 pieces boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 1 piece red bell pepper, chopped
  • 1 piece yellow bell pepper, chopped
  • 1 piece red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese
  • 1 piece lemon, cut into wedges for serving

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the olive oil, minced garlic, oregano, thyme, basil, salt, and pepper.
  3. Add the chicken breasts to the bowl, ensuring they’re well-coated in the marinade.
  4. Arrange the marinated chicken breasts in a baking dish.
Cooking
  1. In the same bowl, toss the sliced zucchinis, red and yellow bell peppers, chopped red onion, halved cherry tomatoes, and sliced Kalamata olives with any remaining marinade.
  2. Spread the vegetable mixture evenly around the chicken in the baking dish.
  3. Cover the dish with foil and bake for 25 minutes.
  4. Remove the foil and sprinkle the crumbled feta cheese on top.
  5. Return the dish to the oven and bake uncovered for an additional 10-15 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Serve your Mediterranean Chicken Zucchini Bake with lemon wedges on the side.
