  • 1/2 cup crumbled feta cheese Substitute with goat cheese or dairy-free alternative if preferred.
  • 1/4 cup sun-dried tomatoes (oil-packed, chopped) If unavailable, fresh cherry tomatoes can be used.
  • 1 cup baby spinach (lightly sautéed or fresh) Using fresh spinach is ideal for enhanced flavor.
  • 1/4 small red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper, to taste Adjust according to your preference.
  • Lemon wedges (for serving) Offers a refreshing zest.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the salmon fillets on the sheet. Top each fillet with spinach, sun-dried tomatoes, red onion, and feta cheese.
  3. Drizzle olive oil over everything and season with dried oregano, salt, and pepper.
Cooking
  1. Bake for 15–18 minutes, until the salmon is cooked through and flakes easily with a fork.
  2. Garnish with lemon wedges and extra herbs if desired. Serve hot and enjoy!
