- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the baby potatoes with olive oil, garlic powder, dried oregano, paprika, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
Cooking
- Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, turning halfway through.
- Remove from the oven and let cool for a few minutes before serving.
- Garnish with fresh parsley or basil if desired and serve warm.
Notes
Make sure to cut any larger baby potatoes in half so they cook evenly. Stir the potatoes halfway through roasting for best results. Feel free to add your favorite spices for extra flavor.
