  • 2 pieces chicken breasts Can substitute with shredded rotisserie chicken
  • 1 piece onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup sundried tomatoes, chopped Can use fresh tomatoes instead
  • 2 cups pasta (your choice) Consider gluten-free pasta if needed
  • 2 cups spinach Fresh spinach recommended
  • 4 cups chicken broth
  • 2 tablespoons tomato paste
  • 1/2 cup Parmesan cheese, grated For garnishing
  • to taste Salt and pepper
  • as needed tablespoons Olive oil For cooking

Method
 

Cooking Instructions
  1. In a large pot, heat a drizzle of olive oil over medium heat.
  2. Toss in the diced onion and minced garlic, sautéing until the onion is translucent and fragrant.
  3. Add the chicken breasts and brown them on both sides, sealing in the juices.
  4. Stir in the chopped sundried tomatoes, chicken broth, and tomato paste. Bring everything to a gentle boil.
  5. Add your pasta and cook according to package instructions until al dente.
  6. Once the pasta is cooked, stir in the fresh spinach and grated Parmesan cheese until everything is nicely combined and the cheese is melted.
  7. Season with salt and pepper to taste, serve hot, and enjoy!
