  • 1 pound Chicken Use rotisserie chicken for faster preparation.
  • 1 medium Onion Chopped.
  • 3 cloves Garlic Minced.
  • 1/2 cup Sundried tomatoes Chopped.
  • 1 cup Pasta Use your choice of pasta, shells or macaroni work well.
  • 2 cups Fresh spinach Packed.
  • 4 cups Chicken broth Low sodium recommended.
  • 2 tablespoons Tomato paste Add more for a thicker soup.
  • 1/2 cup Parmesan cheese Grated, for serving.

Method
 

Preparation
  1. In a large pot, sauté onions and garlic until translucent.
  2. Add chicken and cook until browned.
  3. Stir in sundried tomatoes and pasta, then add chicken broth.
  4. Bring to a boil, then reduce heat and simmer until pasta is cooked.
  5. Stir in spinach and cook until wilted.
  6. Mix in tomato paste and Parmesan cheese until smooth.
Serving
  1. Serve Marry Me Chicken Soup hot in bowls.
  2. You can add extra Parmesan cheese on top for a cheesy flavor.
  3. Pair with crusty bread or a light salad for a complete meal.
