  • 1 cup cooked and mashed sweet potato Ensure it's well cooked and mashed smoothly.
  • 1/2 cup almond butter Can be substituted for peanut butter or sunflower seed butter.
  • 1/4 cup pure maple syrup Make sure it's pure and free from added ingredients.
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon Consider adding extra for garnishing.
  • 1/4 teaspoon salt
  • 2 cups rolled oats Use certified gluten-free oats if necessary.
  • 1/2 cup chopped nuts Such as walnuts or pecans.
  • 1/2 cup dried fruit Such as cranberries or raisins.
  • 1/4 cup chia seeds Optional ingredient.

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  • In a bowl, mix together the mashed sweet potato, almond butter, maple syrup, vanilla extract, cinnamon, and salt until well combined.
  • Stir in the rolled oats, chopped nuts, dried fruit, and chia seeds (if using).
  • Spread the mixture evenly into the prepared baking dish.

Baking

  • Bake for about 20-25 minutes or until set and slightly golden.
  • Allow to cool before cutting into bars.

Notes

These bars can be served on their own or with yogurt. Store in an airtight container at room temperature for up to three days, refrigerated for a week, or frozen for three months. Use parchment paper between layers to prevent sticking.
