Ingredients
  

For the sandwich

  • 8 slices thick-cut sourdough bread Can use any thick-cut bread of choice.
  • 4 oz sharp cheddar cheese, grated
  • 2 oz smoked applewood cheese, grated
  • 2 oz mozzarella cheese, grated
  • 6 slices thick-cut applewood-smoked bacon
  • 3 tablespoons pure maple syrup
  • 4 tablespoons high-quality butter Generously butter one side of each slice of bread.
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dijon mustard (optional) For added flavor.

Preparation

  • Preheat your skillet or air fryer to medium heat (370°F for the air fryer).
  • Cook the bacon until crispy, brushing it with maple syrup during the last 2 minutes of cooking.
  • In a bowl, grate all the cheeses and mix them together.
  • Generously butter one side of each slice of bread.
  • Layer the cheese mixture and maple bacon between the slices of bread, with the buttered sides facing out.

Cooking

  • Cook in the skillet for 3-4 minutes on each side until the bread turns golden brown and the cheese melts.
  • If using the air fryer, cook for 3-4 minutes, flipping halfway through.
  • Let the sandwiches cool for 2 minutes before cutting and serving.

Notes

Serve warm, cut in half or quarters. Pairs well with tomato soup or a simple salad. For extra flavor, add caramelized onions or sliced tomatoes. Keep the heat at medium to avoid burning the bread.
