  • 1 can (15 oz) mandarin oranges, drained
  • 1/2 cup sliced almonds Toast the sliced almonds in a pan for enhanced crunch.
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled You can also experiment with goat cheese or mozzarella.
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Preparation
  1. In a large bowl, combine the salad greens, mandarin oranges, sliced almonds, red onion, and feta cheese.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine.

Notes

This salad is best served fresh. For leftovers, store in an airtight container in the fridge, but consume within a day to avoid soggy greens. Keep the dressing separate if storing.
