Ingredients
  

For the Salad
  • 3 large ripe tomatoes, sliced thick Use the ripest tomatoes for the best flavor.
  • 2 tbsp fresh parsley, finely chopped Adjust with different herbs like basil or mint for variation.
  • 1 each green chili, minced Adjust the amount to your heat preference.
  • 1 clove garlic, minced
  • 3 tbsp extra virgin olive oil Alternative oils such as avocado oil can be used.
  • to taste Salt & freshly ground black pepper
  • a splash lemon juice or red wine vinegar (optional) Adds a nice tang.

Method
 

Preparation
  1. Slice tomatoes into thick rounds and arrange them in a single layer on a white plate.
Dressing
  1. In a small bowl, combine chopped parsley, green chili, garlic, olive oil, salt, and pepper. Stir well.
Assembly
  1. Spoon the herb dressing generously over the tomato slices.
Serving
  1. Let sit for 10 minutes at room temperature to allow flavors to meld. Serve with crusty bread or grilled meat.
