  • 1 pound andouille sausage, sliced Can substitute with turkey or plant-based sausage.
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 leaf bay leaf
  • Salt and pepper to taste
  • Long-grain white rice (to serve)

Method
 

Preparation
  1. Heat a large pot over medium heat.
  2. Add the chopped onion, bell pepper, and celery, and sauté until softened, about 5 minutes.
  3. Toss in the minced garlic and let it cook for an additional minute until fragrant.
  4. Stir in the red beans, sliced andouille sausage, chicken broth, Cajun seasoning, bay leaf, salt, and pepper. Mix everything well.
  5. Bring the mixture to a boil.
  6. Lower the heat and let it simmer for 1 to 2 hours, stirring occasionally.
  7. While the beans are cooking, prepare the long-grain white rice according to package instructions.
  8. Once everything is cooked to perfection, serve the red bean mixture generously over the rice.
