Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the mashed potatoes, sour cream, cream cheese, garlic powder, salt, and pepper. Mix until well combined and creamy.
- Fold in the cheddar cheese, mozzarella cheese, crumbled bacon, and chopped green onions. Keep some cheese and bacon for topping if you like.
- Transfer the mixture to a greased 9x13 inch baking dish and spread it out evenly.
- Sprinkle the remaining cheese and bacon on top of the casserole.
Baking
- Bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the cheese is bubbly.
- Remove from the oven and let it cool slightly. Garnish with extra green onions and serve warm.
