Ingredients
  

For the Casserole

  • 4 cups mashed potatoes Preferably freshly made.
  • 1 cup sour cream Can substitute with plain Greek yogurt.
  • 1 cup cheddar cheese, shredded Keep some for topping.
  • 1 cup mozzarella cheese, shredded Keep some for topping.
  • 1/2 cup cream cheese, softened Ensure it's soft for easy mixing.
  • 1/2 cup cooked bacon, crumbled Reserve some for garnish.
  • 1/4 cup green onions, chopped Save some for garnish.
  • 1 tsp garlic powder
  • to taste Salt and pepper

Optional Garnish

  • as needed additional green onions For topping.
  • as needed additional bacon For topping.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the mashed potatoes, sour cream, cream cheese, garlic powder, salt, and pepper. Mix until well combined and creamy.
  • Fold in the cheddar cheese, mozzarella cheese, crumbled bacon, and chopped green onions. Keep some cheese and bacon for topping if you like.
  • Transfer the mixture to a greased 9x13 inch baking dish and spread it out evenly.
  • Sprinkle the remaining cheese and bacon on top of the casserole.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the cheese is bubbly.
  • Remove from the oven and let it cool slightly. Garnish with extra green onions and serve warm.

Notes

This casserole goes great with grilled chicken or steak and can also be enjoyed on its own as a hearty meal. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
