  • 4 large large russet potatoes
  • 1 cup shredded cheese (Cheddar or your choice)
  • 1/2 cup sour cream for serving
  • 1/2 cup cooked bacon bits
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 400°F (200°C).
  • Wash and slice the potatoes into thick slices, leaving the skins on.
  • Brush both sides of the potato slices with olive oil and sprinkle with salt and pepper.

Baking

  • Place the sliced potatoes on a baking sheet and bake for about 25-30 minutes, or until golden and crispy.
  • Remove from the oven and sprinkle cheese, bacon bits, and green onions on top.
  • Return to the oven for an additional 5-10 minutes, until the cheese is melted.

Serving

  • Serve warm with a dollop of sour cream.

Notes

Make sure to cut the potato slices evenly to ensure they cook at the same rate. Experiment with different cheeses, such as Pepper Jack or Mozzarella, for varied flavors. Feel free to add other toppings like jalapeños or diced tomatoes for extra flavor and color. If you have leftovers, store the cooled slices in an airtight container in the refrigerator for up to 3 days. To reheat, place the slices on a baking sheet and warm them in the oven until they are hot and crispy again.
