  • 1 kg baby potatoes, chopped
  • Grated cheese (to taste) Can use cheddar, mozzarella, or pepper jack
  • 1 medium onion, chopped
  • 8 rashes bacon, trimmed
  • Garlic granules (to taste) Add more for extra garlic flavor
  • Tin foil for easy cleanup Used for covering while cooking

Instructions
 

Preparation

  • Place the chopped baby potatoes in a 6L slow cooker.
  • Add the chopped onion and bacon on top of the potatoes.
  • Sprinkle with garlic granules.
  • Cover with tin foil for easy cleanup.

Cooking

  • Cook on low for 7 hours.

Serving

  • Serve warm and top with extra cheese, sour cream, or chives as desired.

Notes

To store, let the Loaded Potatoes cool completely, then place in an airtight container and refrigerate for 3 to 5 days. Can be frozen for up to 2 months. For extra flavor, consider paprika or rosemary and broil for a crispier texture.
