Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the rolled oats, all-purpose flour, baking soda, cinnamon, and salt.
- In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until smooth.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips, and if you’re using them, add the nuts and dried fruit.
- Drop spoonfuls of dough onto a parchment-lined baking sheet.
Baking
- Bake for 10-12 minutes, or until the edges turn golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
