Ingredients
  

Dry Ingredients
  • 1 cup rolled oats Hearty base for the cookies
  • 1/2 cup all-purpose flour Can substitute with whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon For added flavor
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened At room temperature for better creaming
  • 1/2 cup brown sugar For sweetness and moisture
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract Enhances flavor
Mix-Ins (optional)
  • 1/2 cup chocolate chips Or use vegan chocolate chips
  • 1/2 cup nuts Optional mix-in
  • 1/2 cup dried fruit Optional mix-in

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the rolled oats, all-purpose flour, baking soda, cinnamon, and salt.
  3. In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until smooth.
  4. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips, and if you’re using them, add the nuts and dried fruit.
  6. Drop spoonfuls of dough onto a parchment-lined baking sheet.
Baking
  1. Bake for 10-12 minutes, or until the edges turn golden.
  2. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
