  • 1 head cauliflower, steamed
  • 4 oz cream cheese
  • 1/2 cup sour cream Greek yogurt can be used as a substitute.
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 6 slices bacon, cooked and crumbled
  • 2 tablespoons chives, chopped Optional for garnish.
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the steamed cauliflower, cream cheese, sour cream, sharp cheddar cheese, Monterey Jack cheese, crumbled bacon, and chopped chives.
  3. Season the mixture with salt and pepper to taste.
  4. Pour the delicious combination into a greased baking dish.
  5. Bake in the preheated oven for about 25-30 minutes, or until the cheeses are melted and bubbling.
  6. Allow the casserole to cool slightly before diving in with a serving spoon.
